En este libro se reflexiona y se ofrece información sobre las plantas en las que basamos nuestra alimentación. El autor presenta las especies vegetales de las que nos alimentamos en la actualidad, aquellas que nos proporcionan lo que necesitamos para vivir, pero también aquellas que podemos cultivar en cantidades suficientes, y explica cómo a lo largo de la historia hemos llegado a identificar y cultivar este reducido número de vegetales que usamos en la agricultura y los diferentes usos pasados, presentes y futuros de los cultivos de plantas. También describe la evolución tecnológica en la que se basa la "mejora de las plantas", tanto en sus aplicaciones clásicas como en aquellas que implican las nuevas técnicas moleculares.

This book provides information about the plants on which our nutrition is based and offers some reflections on them. The author as well as presenting the plant species we eat today and those which provide us with other things we need to live, it also describes those suitable for cultivation in sufficient quantities, and explains how over the course of history we have managed to identify and cultivate the small number of plants we use in agriculture, and the different past, present and future of plant crops. It also describes the technological evolution on which "plant improvement" is based, both in its traditional form and in forms that involve new molecular techniques.
